Sad to say, but I would take the career where I make beaucop money and dislike my job over loving what I do and living paycheck to paycheck.
I would never want to live paycheck to paycheck, and I imagine it's worse having the feeling of not knowing where your going to get the money from to pay your bills and buy groceries. I wanna be able to provide a good life for my family one day, and you can't do that without money.
I think once I make enough then I could switch careers and do something I love for a smaller amount of money.

If I love my job, but I'm living paycheck-to-paycheck, I'm gonna go to my employer and let him/her know that I can't live check to check.
Chances are, if I love the job, I'm probably gonna be good enough to be worth more than chump change.
If they can't comply, I leave.
You're not forced to live check-to-check. If you're not living within your means, narrow the gap a little, save the difference, and build up extra money over a certain period of time. By this time, you SHOULD be making more $$, salary wise.
I'm doing that as we speak.
